Lazy Gluten-Free Hot Cross Scrolls Recipe


4 cups gluten-free self-raising flour
4 tsp mixed spice
4 cups greek yoghurt
Drizzle of milk
150 ml melted butter
½ cup brown sugar
1 cup mixed fruit (or choc chip)


Preheat oven to 200C and line baking tray with baking paper
Sift flour and mixed spice into a bowl
Use a butter knife to stir in Greek yoghurt
The mix should be a little tacky, if it is not, drizzle in a bit of milk
Sprinkle a board with GF flour, lightly knead the dough sprinkling with flour if needed
Roll the dough into a rough rectangle shape 1 cm thick (roughly 20 cm by 30 cm)
Brush with melted butter
Sprinkle with brown sugar and mixed fruit (or choc chips)
Rolled the long side up creating a long log shape
Cut into 2 cm width
Place circle up on the tray
Squish slightly with the palm of your hand
Bake for 20-25 mins

OPTIONAL: Drizzle with melted white chocolate

Eat these within 30 minutes of baking: they do not keep!
