Farmer’s wife scone recipe

Everyone needs a scone recipe! Scones are a fabulous, fast option for feeding large (or small) volumes of people at incredibly short notice.

At Monkey Business Catering we use the recipe that my grandmother, Ruth used on the farm. Dairy farmer wives are always feeding the multitudes and her scones were legendary! One of my greatest regrets is that I started catering after she passed away. Whenever we bake scones she is on my mind.

So, here’s to you Mama, I hope you forgive me for giving away one of your secrets.

Mama’s Scone Recipe

Ingredients:
4 cups SR flour
4 teaspoons baking powder
Pinch of Salt
250ml Cream
500ml Milk

Makes:
24 scones

Prep Time:
10 minutes

Cooking Time:
15 minutes

Method:
Line a slice pan with baking paper. Place self-raising flour, baking powder and salt in a mixing bowl. Stir it with a whisk to mix everything through. Create a well in the centre. Pour in cream and milk. Using a butter knife, mix the ingredients together. Add extra milk if required.

Tip onto a floured board and flatten into a rough rectangle shape about 2cm deep. Cut into circles with a scone cutter (or glass) dipped in flour. Place in your prepared baking pan, brush with milk and sprinkle with flour.

Preheat your oven for 10 minutes at 200C. This gives your scones time to rise and proof, and makes them taste better! Bake for 15 to 20 minutes or till they sound hollow when you tap on them.

Serve hot!
