Lazy Gluten Free Hot Cross Scrolls recipe

4 cups gluten-free self-raising flour
4 tsp mixed spice
4 cups greek yoghurt
Drizzle of milk
150 ml melted butter
½ cup brown sugar
1 cup mixed fruit (or choc chip)


  1. Preheat oven to 200C and line baking tray with baking paper
  2. Sift flour and mixed spice into a bowl
  3. Use a butter knife to stir in Greek yoghurt
  4. The mix should be a little tacky, if it is not, drizzle in a bit of milk
  5. Sprinkle a board with Gluten Free flour, lightly knead the dough sprinkling with flour if needed
  6. Roll the dough into a rough rectangle shape 1 cm thick (roughly 20 cm by 30 cm)
  7. Brush with melted butter
  8. Sprinkle with brown sugar and mixed fruit (or choc chips)
  9. Rolled the long side up creating a long log shape
  10. Cut into 2 cm width
  11. Place circle up on the tray
  12. Squish slightly with the palm of your hand
  13. Bake for 20-25 mins

OPTIONAL: Drizzle with melted white chocolate
